Stuffed Peppers

Ready for this one?! Happy low carb day to my FASTer Way ladies. My husband and I enjoy tacos at least once a week! I missed the crunch of that tortilla on my low carb days. Well this has now filled that void. Try this recipe if you’re looking for something new. Only 3 net carbs! ⠀

This recipe will make 18 boats/ 2 boats are a serving. Approx 145 calories, 3 net carbs, 9g fat, 13g protein⠀

  • 1 lb lean ground turkey⠀
  • 1 tsp chili powder⠀
  • 1 tsp cumin⠀
  • 1/2 tsp black pepper⠀
  • 1/4 tsp kosher or sea salt⠀
  • 3/4 cup salsa, no sugar added⠀
  • 1 cup grated cheddar cheese⠀
  • 3 bell peppers⠀

Preheat oven to 375°. Remove seeds from peppers and slice into 6 vertical slices. Cook turkey over medium heat and break up as it cooks. Combine turkey with spices and salsa. Evenly distribute the mixture into the bell peppers and sprinkle with cheese. Bake on parchment lined sheet for 10 minutes or until cheese is melted. If you like your peppers softer put about 1/2 water in baking dish, lay out peppers, and cover with foil
