Shrimp & Chicken
Here’s a great recipe from one of my Macros to Muscles clients! Only 2 net carbs! Happy low carb day ladies!
- 1/4 cup butter⠀
- Olive oil⠀
- 1/2 pound chicken⠀
- 2 lbs of peeled shrimp ⠀
- Juice from one lemon ⠀
- Zucchini spiraled noodles ⠀
In large sauté pan, melt 1/4 cup butter. When warm add shrimp and chicken. I did two pounds of shrimp, peeled and 1/2 pound of diced chicken. Sauté until pink then add salt and pepper, plus juice of large lemon and heaping spoon of minced garlic. Mix and simmer. ⠀
In another pan, while meat sautés, add one large zucchini (spiralized). Sauté with olive oil and minced garlic. I added half a lemon juiced for flavor at the end with salt and pepper. ⠀
Add some chopped scallions and Parmesan cheese at the end before serving. Kids can eat with angel hair.
