Insta Pot Whole Chicken

Yup it’s what’s for dinner (and leftovers!)

  • One small chicken (~4 lbs)
  • 1 Tbs coconut oil
  • Salt and pepper
  • Favorite chicken seasonings

Turn on sauté option and add coconut oil. When the oil heats up place the chicken down and brown. I move mine around a bit to brown all around. When the chicken is nice and brown turn it over and place in trivet that came with your cooker. Add 1/2 cup water on the bottom and add in your seasonings. Close lid to cooker. Set to poultry and increase pressure from low to high. 4 pounds of chicken will cook for 24 minutes. **Note - multiply the number of lbs of chicken by 6 to determine cook time for other sizes.

Enjoy this with some delicious sides like asparagus and quinoa (or mashed potatoes 😋). Save any extra for sandwiches, wraps, or chicken salad for low carb day!
